Melting Pot
Warm a winter evening with decadent Swiss fondue.

Education and Activities

Geography: Nestled in central Western Europe, the small country of Switzerland is constructed of breathtaking landscape that includes lakes, valleys and the mountainous Alps region—with the towering Matterhorn taking center stage. While eating dinner, discuss names and locations of other impressive mountains around the world.

Math & Science: In one of Switzerland’s largest cities, Geneva, watchmakers have created precision timepieces since the 16th century, gaining worldwide acclaim for craftsmanship. Teach children to tell time using the 24-hour clock (also known as military time).

Language Arts & Reading: The Swiss speak the languages of three of their neighbors—France, Italy and Germany. Practice saying “hello” in each of these tongues: bonjour (French), ciao (Italian) and guten tag (German). After dinner, share some Swiss culture with the family by reading the classic book Heidi or watching the film The Swiss Family Robinson.

Food: Switzerland is world famous for exquisite chocolates and Swiss cheeses. Have a Swiss chocolate tasting for dessert.

 

Fondue  
The word fondue stems from the French word fondre, which means “to melt.” The warm pot of melted cheese is served communally, with each diner using his own skewer to dip ingredients. The pot rests on a stand over a heater, which keeps the cheese melted while eating. Don’t have a fondue pot and skewers? No problem! Simply make this recipe in a heavy saucepan and use forks for dipping.

INGREDIENTS:
1 garlic clove, peeled
1 cup apple juice, unsweetened
1 lemon, halved
6 oz. Emmentaler cheese*
6 oz. Gruyere cheese*
3 1/2 tsp. cornstarch
nutmeg (optional), to taste
salt and pepper, to taste

Dipping Foods:
cubed bread
boiled new potatoes
broccoli florets
cauliflower florets
squash slices
cooked asparagus
apple slices
pear slices
cooked, cubed chicken
cooked, sliced sausage

METHOD:
PARENT & CHILD: Prepare selection of ingredients to dip into fondue and set aside. Using a grater, carefully grate cheeses and set aside in a medium bowl. Stir cornstarch into cheese and set aside.
CHILD: Rub the inside of the fondue pot or saucepan with garlic clove. Add apple juice and juice from lemon into the pot.
PARENT: Place pot over medium heat and bring to a simmer.
PARENT & CHILD: Add one cup of cheese into pot and stir until melted. Continue to stir in cheese, one cup at a time, until all is added (make sure mixture does not boil).
PARENT: Carefully transfer pot of cheese to dining area and supervise the dipping.
PARENT & CHILD: Spear one ingredient at a time onto skewer or fork, dip into cheese and eat!

*Can’t find these cheeses? Substitute with 12 oz. of Swiss cheese.
